This Ginger Pork Tenderloin is an easy, flavorful main dish that’s especially convenient for meal prep. The pork marinates in a combination of coconut aminos, fresh ginger, honey, lemon, cilantro, and garlic before being grilled.
We discovered the original recipe in our Once a Month Meals menu, and have remade it several times.
Because most of the thin marinade is discarded before cooking, the nutrition information below estimates the amount of marinade retained by the pork rather than counting the entire batch of marinade.

Method
Make the marinade
- In a bowl, whisk together coconut aminos, ginger, honey, and lemon. Add cilantro and garlic.1/2 cup coconut aminos, 1 Tbsp ginger, fresh, 2 Tbsp honey, 2 Tbsp lemon juice, 1/2 cup cilantro, 2 tsp minced garlic
Marinate
- Add the pork and marinate at least an hour.1 1/2 lb pork tenderloin
Grill/rest
- Grill the pork tenderloin, turning as needed, until the thickest part reaches an internal temperature of 145°F (63°C). Transfer to a serving platter and let rest for 5 minutes before slicing.
